Origin: 80% Pinot Noir, 20% Souvignier Gris. This Piwi vine is the result of two centuries of crossbreeding work carried out by a dozen agricultural institutes and universities in Europe. The parents are Seyval x Zähringer. It is resistant to fungal diseases. No treatment is required in normal years. Ideal for organic cultivation.

 

Development: strong and vertical

 

Yield: To improve the quality of the wine, the vine load per plant must not exceed 1.5 kg for Pinot Noir and 1.8 kg for Souvignier Gris. With this yield, we can produce sparkling wines of the highest quality.

 

Maturation: Pinot Noir matures with Pinot Blanc and Chardonnay, Souvignier gris matures a week later

 

Sugar: 18° – 19° KMW (90 – 95 Öchsle)

 

Lieselehof Method: The natural and old French “Méthode rurale” with disgorging. Without the addition of cane or beet sugar. This sparkling rosé wine was on the lees in the bottle for 18 months.

 

Special Wine: The bouquet is very fruity and fresh. Aromas of strawberries, raspberries and cherry caress the senses. Also, very fruity on the palate, elegant, with lemon added. & a long persistent finale.

 

Pairing: Young and dynamic, fruity, perfect for aperitifs, tempura, creamy cheese and sushi. Also excellent with all sweet desserts and chocolate.
