Origin: This old grape variety, which originates from France, was introduced to South Tyrol in the late 19th century. Sauvignon Blanc is now one of the leading white wine varieties in the region and is enjoying increasing popularity.
Development: strong and rather vertical. Medium-late budding. Medium flowering.
Yield: There are two medium-sized grapes per shoot. To increase the quality of the wine, the vine load per vine must not exceed 1.5 kilograms. With this yield, we are able to produce wines of exceptional quality.
Ripeness: medium with Pinot Blanc and Chardonnay
Sugar: 18.5° – 19.5° KMW (93 – 97 Oechsle)
Wine: typical primary fruits such as gooseberry, passion fruit, elderberry and blackcurrant, accompanied by herbal notes. With wines that range from fresh, grassy and crisp to full-bodied and intense, it is an up-and- coming white grape variety in Alto Adige.
Pairing: Sauvignon Blanc, with its herbal notes and aromatic complexity, goes well with spicy dishes, fish, shellfish and fresh cheese, especially goat cheese. Also with vegetarian cuisine, asparagus and white meat such as chicken, turkey and rabbit.
